They were able to figure out which cheese melts the best by analyzing their proteins and lactic acid levels.

 

And here they are...Gouda . . . gruyere . . . and manchego.

But wait, I know what you are thinking..."how about some cheeses that I have in the fridge?" Then the best for that answer would be to use mild cheddar. It's not the BEST, but it's better than most other options.
