Go to butcher school and open up shop.

I'm unsure what type of certifications or training is required to become a professional meat cutter or butcher. If you can't find a good apprenticeship program or mentor, it looks like Miles City Community College is now offering a meat processing certificate/degree. The school said,

For the past several years, MCC has been working to develop plans for a certificate that can offer a journeyman certificate in meat cutting.

As meat prices continue to climb, one can expect the demand for local processing options to grow.
